- Press the tofu first: wrap the block in a clean kitchen towel, set a heavy skillet on top, and rest 20 minutes. Beginner tip: pressing is what separates crispy tofu from soggy tofu. Don’t skip it.
- Heat the oven to 425°F and line a baking sheet with parchment paper.
- Cut the pressed tofu into 3/4-inch cubes. Toss with the cornstarch, 1/2 teaspoon of salt, and a teaspoon of oil until every cube is lightly dusted.
