Ingredients

Steps

  1. Brew the coffee double strength. Chilling mutes flavor considerably, so start much bolder than you{Q}d drink it.
  2. While the coffee is still hot, whisk in the agar powder and sugar until completely dissolved. Beginner tip: agar must boil for 1 full minute to activate properly. Bring it to a simmer, don’t just warm it, or the jelly won’t set.
  3. Stir in the coconut condensed milk until smooth and uniform in color.
  4. Pour into a shallow dish and refrigerate at least 2 hours, until firmly set.
  5. Cut the set jelly into 1/2-inch cubes with a sharp knife.
  6. Divide the cubes among 4 glasses.
  7. Pour the cold coconut milk over the cubes and serve with a spoon. The jelly should be firm enough to chew pleasantly, not melt. If it{Q}s soft, it needed a longer boil.
