Ingredients
- 2 cups Greek yogurt
- 0.5 cup Feta
- 0.25 cup Dill
- 0.25 cup Mint
- 1 clove Garlic
- 2 tbsp Olive oil
- 0.5 tsp Salt
Steps
- Strain the yogurt through cheesecloth or a fine sieve for 30 minutes if it is not already thick — haydari should stand up on a spoon, not slump.
- Mash the feta into the yogurt until mostly smooth with a few pleasant lumps remaining. Those little pockets of salty feta are the best bites.
- Fold in the finely chopped dill and mint and the grated garlic. Season with salt, remembering the feta already brings salt.
- Drizzle with your best olive oil and scatter a few whole herb leaves over the top for color.
- Chill at least 30 minutes so the garlic mellows into the yogurt. Serve with warm bread or as part of a meze spread.
