  1. Cut the chicken into even 1.5-inch cubes — uniform pieces cook at the same rate, so nobody gets a raw center or a dry edge.
  2. Whisk the olive oil, lemon juice, minced garlic, oregano, paprika, and salt into a marinade. Coat the chicken and rest at least 30 minutes, or up to 4 hours in the fridge.
  3. Cut the peppers and onion into chunks roughly the same size as the chicken. Thread everything onto skewers, alternating chicken with vegetables.
  4. Grill over medium-high heat 10 to 12 minutes, turning every 3 minutes, until the chicken is charred at the edges and reads 165°F inside.
  5. Rest the skewers 5 minutes — the juices redistribute instead of running out on the first cut.
  6. Slide the meat and vegetables off onto warm pita and squeeze fresh lemon over everything before serving.
