Ingredients
- 1.25 lb Ground lamb
- 3 cloves Garlic
- 2 tsp Paprika
- 1 tsp Cumin
- 4 large Flour tortillas
- 3 tbsp Butter
- 1 cup Tomato sauce
- 1 cup Plain yogurt
- 0.5 cup Parsley
- 2 tsp Salt
Steps
- Mix the lamb with minced garlic, paprika, cumin, and salt, kneading 4 minutes until tacky. Shape into 4 long thin logs, thinner than a broom handle.
- Grill or broil the logs 8 to 10 minutes, turning often, until browned all over and cooked through.
- Warm the tortillas and lay a lamb log on each. Roll them up snugly, then slice each roll into 2-inch pinwheels — the spiral cross-section is the signature look.
- Arrange the pinwheels cut-side up on a platter. Spoon the warm tomato sauce over them and add dollops of yogurt alongside.
- Melt the butter until foaming and drizzle it over the top at the table. Scatter parsley and serve immediately while the butter still sizzles.
