Ingredients
- 2 cups Chickpea flour
- 2.5 cups Water
- 1/3 cup Olive oil
- 1 tsp Black pepper
Steps
- Whisk the chickpea flour and water until completely smooth and rest 30 minutes — the batter hydrates and the raw edge disappears.
- Whisk in the olive oil and salt until glossy.
- Pour into a screaming-hot oiled pizza pan and bake at 450°F for 25 minutes until the top is deeply golden and crisp at the edges.
- Shower with cracked black pepper, cut into wedges, and serve hot, traditionally on top of a slice of pizza.
- Fainá is traditionally eaten draped over a slice of pizza — try it once and you will understand.
