Steps
- Soak the hominy and beans overnight; this is a national-dish stew and it does not rush.
- Simmer the pork, hominy, and beans 90 minutes, skimming, until the grains begin to burst and thicken the pot.
- Add the squash in chunks and cook 45 minutes more, stirring often — the squash should collapse into the stew.
- Brown the chorizo separately and stir it in at the end with the paprika sizzle.
