Ingredients
- 4 Pita bread
- 1 lb Ground beef
- 1/2 Onion
- 1/2 cup Parsley
- 2 cloves Garlic
- 1.5 tsp Baharat
- 1 tbsp Olive oil
Steps
- Grate the onion and squeeze it bone-dry — wet filling steams the pita instead of crisping it.
- Mix the beef with the dry onion, chopped parsley, garlic, baharat, and salt.
- Split each pita into two thin rounds (or use pocket pitas as-is) and spread the meat in a thin, even layer — thick filling stays raw while the bread burns.
- Brush both sides with olive oil.
- Cook in a hot skillet or on a grill, 4 minutes per side, pressing gently, until the pita is crisp and the meat reads 160°F.
- Rest 3 minutes, cut into wedges, and serve with lemon and yogurt for dunking.
