Ingredients

Steps

  1. Place a large oven-safe skillet over medium-high heat, add the breakfast sausage, and break it into crumbles with a wooden spoon.
  2. Brown 5-6 minutes, stirring occasionally, until no pink remains and the edges look crisp.
  3. While it browns, strip the kale leaves from their tough stems and chop them roughly; mince the garlic.
  4. Add the garlic, kale, and red pepper flakes to the skillet and cook 3-4 minutes, stirring, until the kale wilts down and turns a deep glossy green.
  5. Use the back of your spoon to make two wells in the mixture, then crack one egg into each well and cover with a lid.
  6. Cook 4 minutes over medium-low heat until the whites are fully set and the yolks are still a little soft. Taste and adjust salt, then serve straight from the skillet.
