Eton Mess
This is the kind of British snack you’ll make on repeat — strawberries and heavy cream, 25 minutes, big payoff.

Ingredients
- 1.5 lb Strawberries
- 2 cups Heavy cream
- 6 Meringue nests
- 3 tbsp Granulated sugar
- 1 tsp Vanilla extract
Steps
- Hull and quarter the strawberries, toss with the sugar, and macerate 15 minutes until they release their juices. Mash a third of them roughly for the pink swirl.
- Whip the cream with the vanilla to soft peaks — it should billow, not stand in stiff spikes. Overwhipped cream turns the mess grainy.
- Crush the meringues into rough shards, keeping a mix of dust and chunks. Texture contrast is the whole dessert.
- Fold everything together loosely: cream, meringue shards, whole and mashed strawberries, in just a few strokes. It should look gloriously wrecked — the “mess” is not a suggestion.
- Serve immediately in glasses or a big bowl. Legend says a pavlova got sat on at Eton; the result was better than the original.
