Semolina Halva with Toasted Nuts
Indian flavors, weeknight effort. Semolina meets ghee in a 20-minute breakfast worth keeping in rotation. It is weeknight cooking that still hits your targets — 8 grams of protein per serving. Naturally vegetarian, it scales cleanly if you are cooking for more than one.

Ingredients
- 3/4 cup Semolina
- 1/3 cup Ghee
- 1/2 cup Sugar
- 1/4 cup Pistachios
- 1/2 tsp Cardamom
- 2 tbsp Raisins
- 1.5 cups Water
Steps
- Toast the semolina in the ghee over medium heat, stirring constantly, 6 to 8 minutes until it smells nutty and turns deep golden; this toasting is the entire flavor of the dish.
- Meanwhile simmer the water, sugar, and cardamom into a light syrup.
- Stand back and pour the hot syrup into the semolina; it will bubble violently.
- Stir vigorously until the halva pulls away from the pan sides, about 3 minutes.
- Fold in the raisins and half the pistachios.
- Mound into a serving dish and shower with the remaining pistachios.
- Serve warm; it firms as it cools.
