Ingredients
- 1/2 cup Glutinous rice
- 1/3 cup Ube powder
- 1 cup Coconut milk
- 1/4 cup Sugar
- 1 pinch Salt
- 2 tbsp Coconut cream
Steps
- Rinse the glutinous rice until the water runs clear.
- Simmer with 2.5 cups of water 20 minutes, stirring often; the rice breaks down into a thick porridge.
- Whisk the ube powder with a ladle of hot porridge until smooth, then stir it back in; this prevents purple lumps.
- Add the coconut milk, sugar, and salt; simmer 5 more minutes until vivid violet and creamy.
- The champorado should ribbon off the spoon.
- Serve warm with a swirl of coconut cream.
