Ingredients
- 2 cups Hominy
- 3 cups Milk
- 1 cup Coconut milk
- 1 cup Sugar
- 2 Cinnamon sticks
- 4 Cloves
- 0.5 tsp Salt
Steps
- Soak the hominy overnight — the big, chewy kernels need a head start, or you will be cooking until tomorrow.
- Simmer the drained hominy in fresh water for 60 to 90 minutes, until the kernels are completely tender and starting to split. Drain.
- Return the hominy to the pot with the milk, coconut milk, sugar, cinnamon sticks, cloves, and salt.
- Simmer gently 30 minutes, stirring often, until the liquid thickens into a creamy, porridge-like bath around the kernels.
- Fish out the cinnamon sticks and cloves. The pudding should be loose enough to pour slowly — it thickens as it cools.
