Ingredients
- 2.5 lb Chicken
- 0.75 cup Peanuts
- 0.5 cup Cashews
- 3 tbsp Red palm oil
- 1 Onion
- 4 cloves Garlic
- 1 tbsp Ginger
- 1 cup Coconut milk
- 0.5 cup Cilantro
- 1 Lime
- 2 tsp Salt
Steps
- Season the chicken with salt and lime juice and rest 20 minutes while you build the sauce base.
- Blend the peanuts and cashews with the coconut milk into a thick, pourable cream — this nut cream is the body of xinxim.
- Brown the chicken pieces in the palm oil until golden on all sides, then set aside. The dendê stains the chicken a beautiful amber.
- Soften the onion, garlic, and ginger in the same oil, then pour in the nut cream and 1 cup of hot water. Simmer 10 minutes, stirring, until thickened.
- Return the chicken to the sauce and simmer 25 minutes, until cooked through and the sauce clings richly to every piece.
- Shower with cilantro and serve over white rice. Xinxim is Bahia’s answer to the question of how luxurious chicken can get.
