Ingredients
- 2 lb Pork belly
- 1 tbsp Salt
- 1 tsp Black pepper
- 3 cloves Garlic

Steps
- Cut the pork belly into 1.5-inch chunks, keeping the skin on. Toss with salt, pepper, and crushed garlic and rest 30 minutes.
- Start the pieces skin-down in a cold, dry heavy pot over medium heat — starting cold renders the fat gradually instead of seizing the skin.
- Cook low and slow for 40 minutes, turning occasionally, as the fat renders out and the pieces shrink. Do not rush this stage.
- Raise the heat to crisp the pieces in their own rendered fat, 10 to 15 minutes, turning until deeply golden and puffed all over.
- Drain on a rack and hit with an extra pinch of salt while hot. They crisp further as they cool.
- Serve with lime wedges and cold beer nearby. Proper torresmo shatters audibly — if it does not crunch, it needs more time.
