Tostones with Garlic Mojo

Ingredients
- 4 Green plantains
- 2 cups Vegetable oil
- 6 cloves Garlic
- 0.5 cup Olive oil
- 1 Lime
- 1 tsp Sea salt
- 0.25 cup Fresh cilantro
Steps
- Peel the green plantains — score the skin lengthwise and pry it off in strips; green plantain skin does not peel like a banana.
- Cut into 1.5-inch chunks and fry at 350°F for 4 minutes until pale gold and tender. Drain.
- Smash each chunk flat with the bottom of a glass or a tostonera to about 1/2-inch thick. The smashed edges get extra crisp.
- Fry again at 375°F for 3 minutes until deep golden and crisp. Salt immediately.
- For the mojo, mash the garlic with salt into a paste, whisk in olive oil and lime juice. Serve the hot tostones with the mojo for dipping and a shower of cilantro. Twice-fried, completely addictive.
