Ingredients
- 5 Very ripe plantains
- 1.5 lb Ground beef
- 0.75 cup Sofrito
- 1 packet Sazon
- 3 Eggs
- 225 g Mozzarella
- 1 cup Tomato sauce
- 1 cup Vegetable oil
Steps
- Slice the ripe plantains lengthwise into 1/4-inch planks and fry until deeply golden and caramelized. Drain on a rack.
- Brown the beef with the sofrito, sazón, and tomato sauce until the liquid cooks off — the filling should be moist, not saucy, or the pastelón won’t slice.
- Beat the eggs with a pinch of salt. Layer in a greased baking dish: plantains, half the beef, half the mozzarella, then repeat, ending with plantains.
- Pour the beaten eggs evenly over the top — they bind the layers as they bake.
