- Choose plantains that are nearly black — the blacker the peel, the sweeter the flesh. Yellow plantains make tostones; black plantains make maduros. This distinction matters.
- Slice on a sharp diagonal, 1/2-inch thick. The diagonal cut maximizes the caramelized surface area.
- Fry in 350°F oil for 2 to 3 minutes per side until deep golden with dark caramelized edges. Don’t rush them — the sugars need time to caramelize.
