Ingredients
- 2.5 cups Flour
- 0.5 cup Semolina
- 1 cup Butter
- 0.5 cup Powdered sugar
- 2 Eggs
- 1 tsp Baking powder
- 2 cups Sugar
- 1 tbsp Lemon juice
- 16 Pistachios
- 1 tsp Vanilla
Steps
- Rub the soft butter into the flour, semolina, powdered sugar, and baking powder until sandy, then work in the eggs and vanilla into a soft, smooth dough.
- Shape into 16 ovals and press a hazelnut into the top of each — the nut is both decoration and handle.
- Bake at 350°F for 20 to 25 minutes until pale golden. They should be just set; they firm as they cool.
- Meanwhile, simmer the sugar with 2.5 cups water and the lemon juice for 10 minutes into a light syrup. Cool it slightly — the rule is hot cookies, warm syrup.
- Pour the warm syrup over the hot cookies in their pan. They will drink it astonishingly fast, swelling slightly.
