Copycat Cheesy Gordita Crunch (Taco Bell’s style)
A Mexican dinner built around lean ground beef (93/7) and small flour flatbreads — on the table in 30 minutes. The macros do the talking: 32g protein, 34g carbs, and 12g fat in every 380-calorie serving. Naturally high-protein, it scales cleanly if you are cooking for more than one.

Ingredients
- 6 oz Lean ground beef (93/7)
- 2 Small flour flatbreads
- 2 Crunchy corn taco shells
- 1/3 cup Reduced-fat cheddar
- 2 tbsp Spicy light ranch
- 1 cup Shredded iceberg lettuce
- 1 tbsp Taco seasoning
Steps
- Brown the beef with the taco seasoning and a splash of water until saucy.
- Warm the flatbreads until pliable, then scatter the cheddar over one side and fold loosely to melt it — this cheese layer glues the flatbread to the shell.
- Bake the crunchy shells 5 minutes at 350°F so they stay crisp inside the soft wrap.
- Hold a shell, press the cheesy flatbread around the outside, and hold 20 seconds — cheese is the mortise here.
- Fill the shell with beef, a drizzle of spicy light ranch, and lettuce.
- Serve immediately; the shell’s crunch has about a 10-minute half-life once it meets warm beef.
