Ingredients
- 1.25 lb Large shrimp
- 1/3 cup Cornstarch
- 1 Egg white
- 3/4 cup Walnuts
- 3 tbsp Honey
- 1/3 cup Greek yogurt
- 2 tbsp Light mayonnaise
- 1 tbsp Sweetened condensed milk
- 1 tsp Rice vinegar
- 1/4 cup Water
Steps
- Candy the walnuts first: simmer water, honey, and walnuts 5 minutes, then bake at 350°F until amber and tacky — they crisp as they cool.
- Whisk the sauce — yogurt, light mayo, condensed milk, vinegar — and chill it; cold sauce on hot shrimp is the contrast that makes the dish.
- Pat the shrimp dry, coat in egg white then cornstarch; moisture is the enemy of crunch.
- Air-fry at 400°F for 8 minutes, flipping once, until pink and shattering-crisp.
- Toss the hot shrimp through the cold sauce just to coat — drown them and the crunch is gone.
- Crown with candied walnuts and serve immediately; this one waits for no photographer.
