Ingredients
- 1 lb Chicken breast
- 3/4 cup Wild rice blend
- 5 cups Chicken broth
- 8 oz Mushrooms
- 2 Carrots
- 2 stalks Celery
- 1 Onion
- 1/2 cup Half-and-half
- 1 tbsp Cornstarch
- 1 tsp Thyme
Steps
- Simmer the wild rice in broth until the grains split and curl, about 40 minutes; wild rice is never quick, so give it its time.
- Meanwhile, sear the chicken in the soup pot until golden, then set aside; the fond seasons the whole pot.
- Sweat onion, carrots, celery, and mushrooms until the mushrooms give up their water and start to brown.
- Add broth, rice, and the shredded chicken back in; simmer 15 minutes so the flavors marry.
- Whisk cornstarch into the half-and-half, stir it in, and simmer 3 minutes until the broth turns lightly creamy.
- Finish with thyme and a crack of pepper; taste the salt last, because broth brands vary wildly.
