Copycat Vito Unwich (Jimmy John’s style)

American flavors, weeknight effort. Genoa salami meets capicola in a 15-minute lunch worth keeping in rotation. Each serving lands at 260 calories with 28g of protein, so it eats like a much heavier meal. It scales cleanly if you are cooking for more than one.

Ingredients

Steps

  1. Pick the 6 largest, flattest iceberg leaves and chill them — cold lettuce is crisp lettuce, and crisp lettuce is the whole Unwich contract.
  2. Layer salami, capicola, and provolone down the center of each doubled-up leaf; two leaves per wrap keeps everything contained.
  3. Pile on tomato, onion, and banana peppers, then drizzle with vinegar, the teaspoon of oil, and oregano — the oil and vinegar have to touch the meat to carry the flavor.
  4. Roll each wrap tight like a burrito, tucking the ends; a tight roll eats like a sandwich instead of falling apart like a salad.
  5. Slice on the diagonal and serve immediately, because lettuce waits for no one.
