Ingredients
- 1 1/4 lb Chicken breasts
- 8 oz Cremini mushrooms
- 3/4 cup Madeira wine
- 1 cup Low-sodium beef broth
- 1 tbsp Cornstarch
- 1 tbsp Light butter
- 4 oz Part-skim mozzarella
- 1 lb Asparagus spears
- 2 cups Cauliflower rice
- 2 cloves Garlic
- 4 sprays Olive oil spray
Steps
- Pound the chicken to an even 1/2-inch thickness so it cooks through without drying out at the edges.
- Sear in a hot oiled skillet 4 minutes per side until deeply golden, then set aside.
- In the same pan, sear the mushrooms and garlic undisturbed for 2 minutes so they brown instead of steam.
- Pour in the Madeira and scrape up every browned bit — that fond is where the restaurant flavor lives.
- Add the broth and simmer 8 minutes until reduced by a third, then whisk in the cornstarch slurry and simmer 2 more minutes until glossy.
- Return the chicken to the pan, top each piece with mozzarella, and broil 2 minutes until melted and spotted.
- Microwave the asparagus with a splash of water 3 minutes for bright, crisp spears, and serve everything over cauliflower rice warmed in the sauce for the final minute.
