Ingredients

Steps

  1. Chill the lettuce leaves and pat them completely dry — wet leaves slide apart and ruin the wrap.
  2. Sear the ground chicken in a ripping-hot wok and leave it alone for 2 full minutes; the crust that forms is where the flavor comes from.
  3. Break the chicken into fine pebbles, then add the mushrooms, ginger, and water chestnuts and stir-fry 2 minutes.
  4. Pour in the soy sauce, hoisin, and rice vinegar and let it bubble down until glossy and clinging, about 2 minutes.
  5. Kill the heat and stir in the sesame oil and green onions so their flavor stays fresh instead of cooked flat.
  6. Spoon the hot filling into the cold leaves and eat immediately, one hand, over the plate — drips are part of the deal.
