Ingredients
- 1 lb Dried black-eyed peas
- 8 oz Tasso ham
- 1 Yellow onion
- 1 Bell pepper
- 1 rib Celery
- 4 cloves Garlic
- 6 cups Chicken stock
- 1 Bay leaf
- 1 tbsp Cajun seasoning
- 4 cups Collard greens
- 6 cups Cooked rice
Steps
- Soak the peas 4 hours or overnight; drain. Dice the tasso and brown it in a heavy pot 5 minutes until the edges crisp.
- Add the onion, bell pepper, celery, and garlic; cook 7 minutes until soft. Stir in the Cajun seasoning for 1 minute.
- Add the peas, stock, and bay leaf. Simmer 35 minutes until the peas are tender but still hold their shape.
- Stir in the chopped collards and simmer 10 minutes until silky. Mash a few peas into the broth for body.
