Classic Beignets

Ingredients
- 3 cups All-purpose flour
- 1/4 cup Sugar
- 2 tsp Instant yeast
- 3/4 cup Warm milk
- 1 Egg
- 3 tbsp Butter
- 1 tsp Salt
- 6 cups Neutral oil
- 1 cup Powdered sugar
Steps
- Whisk the flour, sugar, yeast, and salt in a large bowl. Stir in the warm milk, egg, and melted butter until a soft, slightly sticky dough forms. Knead 6 minutes until smooth.
- Cover and let rise in a warm spot until doubled, about 1 hour. The dough should feel puffy and spring back slowly when poked.
- Roll the dough 1/4 inch thick on a floured surface and cut into 2-inch squares. Let the squares rest 10 minutes so they puff a little.
- Heat the oil to 350°F in a deep pot. Fry 3 or 4 squares at a time, turning once, until deeply golden and puffed, about 2 minutes total. Drain on a rack.
- While still hot, bury the beignets under a blizzard of powdered sugar. Eat them warm, preferably standing up, preferably with coffee.
