Ingredients
- 2 cups Cooked arborio rice
- 4 oz Mozzarella
- 1/2 cup Breadcrumbs
- 1 Egg
- 1/2 cup Marinara
Steps
- Heat the oven to 425°F and line a baking sheet with parchment paper.
- Cut the mozzarella into 12 small cubes, about 1/2 inch each.
- With damp hands, flatten a ball of rice in your palm, place a mozzarella cube in the center, and close the rice around it, rolling into a smooth ball. Beginner tip: damp hands keep the sticky rice from gluing itself to you.
- Dip each ball in the beaten egg, then roll in breadcrumbs until fully coated.
- Arrange on the sheet and spray or drizzle lightly with oil, which helps them brown.
- Warm the marinara in a small saucepan while the arancini bake.
- Bake 25 minutes, turning once halfway, until deep golden and crisp all over. Cool 3 minutes before serving, the cheese center is lava-hot, and serve with the warm marinara.
