Ingredients
- 2 lb Chicken thighs
- 1.5 cups Shaoxing wine
- 1 cup Chicken stock
- 2 tbsp Goji berries
- 4 slices Fresh ginger
- 1 tsp Salt
- 1 tsp Sugar

Steps
- Steam the chicken thighs 25 minutes until just cooked through, then chill in ice water. Cold chicken slices cleanly and stays juicy.
- Shred or slice the chicken into bite-sized pieces and pack into a shallow container.
- Simmer the wine, stock, ginger, goji berries, salt, and sugar 5 minutes. Cool the marinade completely — hot liquid would cook the chicken further and cloud the wine.
- Pour the cooled marinade over the chicken, cover, and refrigerate at least 4 hours, ideally overnight. Patience is the recipe; the wine needs time to perfume the meat.
- Serve cold, straight from the fridge, with a little of the marinade spooned over. This is drinking food — it belongs next to a glass of something.
