- 4 tbsp Butter
- 2 tbsp Paprika

- 1 Lemon
- 2 tbsp Neutral oil
Steps
- Stir the paprika, garlic powder, onion powder, thyme, cayenne, black pepper, and salt into a small bowl. This is your blackening blend; it should smell smoky and assertive.
- Pat the fillets very dry, brush with oil, and coat every surface generously with the spice blend, pressing it on.
- Heat a cast-iron skillet over high heat until it just starts to smoke, then lay in the fillets. Sear 3 minutes without touching so the crust sets and chars at the edges.
- Flip and sear 2 to 3 minutes more until the fish flakes at the thickest part. Work in batches if the pan is crowded.
