Almond Tofu
This is the kind of Chinese snack you’ll make on repeat — almond milk and agar agar, 20 minutes, big payoff. At 140 calories and 2g protein per serving, it fits easily into a high-protein day. Naturally vegetarian and vegan, it scales cleanly if you are cooking for more than one.

Ingredients
- 2 cups Almond milk
- 2 tsp Agar agar
- 0.25 cup Sugar
- 0.5 tsp Almond extract
- 1 cup Canned longan
- 1 cup Water
Steps
- Simmer the almond milk with the agar 3 minutes, stirring, until the agar dissolves completely. Undissolved agar means a grainy set.
- Stir in the sugar and almond extract off the heat. Pour into a shallow dish and chill 2 hours until firmly set.
- Cut into diamonds or cubes. The set should wobble like panna cotta when the dish is nudged.
- Serve cold in bowls with the longan and a spoonful of their syrup. Delicate, floral, and barely sweet — the gentle ending to a rich meal.
