Ingredients
- 1 can Canned tuna
- 1 oz Cheddar
- 1 tbsp Greek yogurt
- 1 stalk Celery
- 6 leaves Butter lettuce
Steps
- Turn the oven to broil on high and line a sheet pan with foil. The foil catches drips and makes cleanup easy.
- Drain 1 can tuna very well and flake it into a medium bowl. Fold in 1 tbsp Greek yogurt and 1 celery stalk, finely diced -- the yogurt replaces mayo and keeps the filling light.
- Season with salt and pepper and taste it now: the filling should be bright and well-seasoned before it ever goes under the broiler.
- Pat 6 butter lettuce leaves dry and arrange them cupped-side up on the sheet pan. Dry leaves hold the filling better.
- Pile the tuna mixture into the leaves and sprinkle 1 oz cheddar over the tops. Shredded or small pieces melt more evenly than one thick slice.
- Broil 2-3 minutes until the cheese is melted and bubbling with a few browned spots -- keep an eye on it, since the broiler works fast. Serve immediately, hot filling against the cool, crisp lettuce.
