Ingredients
- 6 oz Ground beef
- 3 cups Zucchini noodles
- 1 cup Crushed tomatoes
- 1/2 Onion
- 1 tsp Italian seasoning
- 1 tbsp Olive oil
Steps
- Dice 1/2 onion into small pieces. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add 6 oz of ground beef and the onion with 1 teaspoon of Italian seasoning. Break the beef into small crumbles.
- Cook 6 to 7 minutes, stirring occasionally, until the beef is deeply browned — that browning is where the flavor lives, so let it sit undisturbed between stirs.
- Pour in 1 cup of crushed tomatoes and scrape up any browned bits from the bottom of the pan.
- Lower the heat and simmer 15 minutes, until the sauce thickens enough to coat a spoon. Taste and season with salt and pepper.
- While the sauce simmers, heat a separate skillet over medium-high heat with a drizzle of oil.
- Add 3 cups of zucchini noodles and sauté just 2 minutes, tossing constantly — they go from perfect to soggy fast, so pull them while they still have bite.
- Divide the noodles among bowls, ladle over the bolognese, and serve immediately.
