Ingredients
- 12 oz Wheat noodles
- 3/4 lb Ground pork
- 1/3 cup Tahini
- 2 tbsp Chili oil
- 4 Bok choy
- 3 tbsp Soy sauce
- 1 tsp Sichuan pepper
Steps
- Bring a large pot of water to a rolling boil for the noodles and bok choy.
- Brown the ground pork in a skillet over high heat, breaking it fine, until crisp at the edges, about 6 minutes.
- Stir in the toasted, ground sichuan pepper in the last minute — it should smell citrusy and numbing.
- Whisk the tahini with the chili oil, soy sauce, and 1/4 cup of hot noodle water into a pourable sauce.
- Blanch the bok choy 2 minutes until bright green; lift out with tongs.
- Boil the noodles until just tender; reserve a cup of the starchy water.
- Toss the noodles with the tahini sauce, loosening with splashes of noodle water until silky.
- Top each bowl with pork, bok choy, and an extra drizzle of chili oil.
