Ingredients
- 2 cups Chufa tiger nuts
- 6 cups Water
- 3/4 cup Sugar
- 1 strip Lemon peel
- 1 stick Cinnamon
Steps
- Soak the tiger nuts 8 hours or overnight until plump and soft.
- Blend with 3 cups fresh water 3 minutes until completely pulverized.
- Strain through a fine cloth, squeezing hard; repeat the blend with 3 more cups water and strain again.
- Stir the sugar into the milky liquid with lemon peel and cinnamon; chill at least 4 hours.
- Remove the peel and cinnamon before serving.
