Bozena Shiro
This is the kind of Ethiopian dinner you’ll make on repeat — beef cubes and shiro powder, 40 minutes, big payoff. It is weeknight cooking that still hits your targets — 32 grams of protein per serving. Simple enough for a Tuesday, good enough to serve to guests — that is the whole idea.

Ingredients
- 1.5 lb Beef cubes
- 1 cup Shiro powder
- 1 Red onion
- 2 tbsp Berbere
- 1/4 cup Niter kibbeh
- 4 cloves Garlic
- 1 tbsp Ginger
- 3 cups Beef stock
- 1 tsp Salt
Steps
- Brown the beef cubes hard in niter kibbeh, 8 minutes; set aside. The fond left behind flavors the shiro.
- Soften the minced onion in the same pot 7 minutes; add the berbere, garlic, and ginger for 2 minutes.
- Whisk the shiro powder with cold stock into a slurry; pour in, whisking constantly. Simmer 10 minutes until thick.
- Return the beef and simmer 12 minutes until tender and the shiro is rich and glossy.
- Serve on injera. The best of both worlds — hearty beef folded into creamy shiro.
