Ingredients
- 2 lb Ground beef and pork mix
- 50 g Stale bread roll
- 1 Egg
- 1 Yellow onion
- 2 tbsp Dijon mustard
- 3 Hard-boiled eggs
- 6 slices Bacon
- 1 cup Beef broth
Steps
- Mix the meat with the soaked bread, egg, grated onion, mustard, salt, and pepper. Don’t overwork it — overmixed meatloaf is dense.
- On a sheet of parchment, pat the mixture into a rectangle, line up the peeled hard-boiled eggs down the center, and roll it up so the eggs are hidden inside. The sliced-egg mosaic is the classic reveal.
- Wrap the loaf in the bacon slices, seam-side down, and set in a roasting pan with the broth. The bacon bastes the loaf as it cooks.
