Ingredients
- 4 whole Tilapia
- 2 cups Coconut milk
- 2 tbsp Ginger
- 4 cloves Garlic
- 1 Onion
- 3 Long chilies
- 1 bunch Bok choy
- 2 tbsp Fish sauce
Steps
- Score the tilapia on both sides so the coconut sauce penetrates.
- Simmer the coconut milk with the ginger, garlic, and onion, 8 minutes, until fragrant.
- Lay the fish in the simmering milk in a single layer; spoon the hot milk over the top.
- Cook 12 minutes, basting twice — the fish should be opaque and just flaky.
- Add the chilies and bok choy for the last 4 minutes.
- Season with fish sauce. The sauce should be creamy and gently hot, the fish silky. Serve over rice with the sauce ladled generously.
