Ingredients
- 8 oz Camembert (or brie)
- 4 oz Cream cheese
- 3 tbsp Butter
- 2 tsp Sweet paprika
- 0.5 tsp Caraway seeds
- 0.5 Yellow onion
- 2 tbsp Wheat beer
- 6 Soft pretzels
Steps
- Let the Camembert come fully to room temperature — cold cheese won’t blend, and obatzda should be spreadable, not chunky.
- Mash the Camembert, cream cheese, and butter together with a fork until mostly smooth with a few characterful lumps.
- Stir in the paprika, a pinch of caraway, a splash of wheat beer, and salt. The beer thins it slightly and adds that beergarden tang.
- Fold in the finely diced onion at the last minute so it stays crisp.
- Dust with more paprika and serve with warm pretzels and radishes. Traditionally made to use up overripe Camembert — which is to say, make it when your cheese is at its most fragrant.
