Ingredients
- 4 large Tart apples
- 3/4 cup Unsalted butter
- 1.25 cups Sugar
- 3 large Eggs
- 2.5 cups All-purpose flour
- 2 tsp Baking powder
- 2 tsp Ground cinnamon
- 2 tbsp Brandy
- 1/2 cup Chopped walnuts
- 2 tbsp Powdered sugar
Steps
- Toss the diced apples with the brandy, half the sugar, and the cinnamon; rest 20 minutes. The apples release their juices and the sugar starts dissolving into a spiced syrup.
- Cream the butter with the remaining sugar until fluffy, beat in the eggs one at a time, then fold in the flour and baking powder.
- Fold in the apples with all their syrupy juices and the walnuts. The batter will be chunky and generous — that is correct.
- Bake in a buttered 9-inch springform at 350°F for 50 to 55 minutes until deep golden and a skewer comes out with moist crumbs but no wet batter.
- Cool 20 minutes, release the ring, and dust with powdered sugar. Serve barely warm with thick yogurt; the tang against the spiced apples is the whole dessert.
