Ingredients
- 2 lb Sour cherries
- 4 cups Sugar
- 2 cups Water
- 2 tbsp Lemon juice
- 1 tsp Vanilla extract
Steps
- Pit the cherries over a bowl to catch every drop of juice — the juice becomes the syrup, so none of it is waste.
- Layer the cherries and sugar in a heavy pot and rest 2 hours; the sugar draws out the juice and starts dissolving on its own.
- Bring to a boil, then simmer 30 minutes, skimming the foam, until the syrup thickens to coat a spoon. The cherries should be glossy and jewel-like, holding their shape.
- Stir in the lemon juice and vanilla, boil 2 more minutes, then cool completely in the pot. The syrup thickens further as it cools — judge it cold, not hot.
- Spoon into sterilized jars; it keeps for months in the pantry. Serve a spoonful in a small dish with a glass of cold water, the traditional Greek welcome — the sweet is eaten, the water drunk after.
