Ingredients
- 2 cups Arborio rice
- 1 cup Crushed tomatoes
- 1/2 Yellow onion
- 8 oz Low-moisture mozzarella
- 2 Eggs
- 2 cups Breadcrumbs
- 4 cups Vegetable broth
- 1/2 cup Parmigiano Reggiano
- 4 cups Vegetable oil
Steps
- Cook the rice like a thick risotto: soften the onion, toast the rice, add tomatoes and broth, and stir until dense and creamy, about 18 minutes. Cool completely — warm rice will not hold a shape.
- Stir in the parmigiano and 1 beaten egg as a binder. Chill 1 hour; cold risotto molds cleanly.
- Scoop ovals of rice, press a cube of mozzarella into the center of each, and seal the rice around it. The cheese core is the telefono wire.
- Roll each supplì in flour, beaten egg, then breadcrumbs, pressing the crumbs on firmly.
- Fry at 350°F in batches, about 4 minutes, until deeply golden. Drain on a rack and salt at once.
- Serve hot and pull one apart at the table — the mozzarella should stretch like an old telephone cord.
