Ingredients
- 2 cups Rice
- 0.5 lb Chicken thigh
- 4 oz Burdock root
- 1 Carrot
- 4 Shiitake
- 1 piece Fried tofu
- 2 cups Dashi
- 3 tbsp Soy sauce
- 2 tbsp Mirin
- 1 tbsp Sake
Steps
- Rinse the rice and soak 30 minutes; drain. Julienne the burdock (soak in water to keep it from browning), carrot, shiitake, and tofu into matchsticks.
- Dice the chicken small. Seasoned rice rewards small, even pieces that cook through in the same time as the rice.
- Combine the rice, dashi, soy, mirin, and sake in a pot. Scatter the chicken and vegetables on top — do not stir, or the bottom burns.
- Bring to a boil, then cover and cook on low 15 minutes. Rest off the heat 10 minutes without lifting the lid.
- Fluff gently with a rice paddle, mixing the toppings through. Serve hot. The whole pot tastes like autumn.
