Ingredients
- 2 cups Sweet rice
- 0.5 cup Adzuki beans
- 1 tbsp Black sesame seeds
- 1 tsp Salt
- 2.5 cups Water
Steps
- Simmer the adzuki beans 20 minutes until just tender but not bursting; reserve the deep red cooking liquid.
- Rinse the sweet rice and combine with the beans and enough cooking liquid plus water to make 2.5 cups total. The red liquid dyes the rice its celebratory pink.
- Cook covered on low 15 minutes, then rest 10 minutes without lifting the lid.
- Fluff gently and season with salt. The rice should be chewy and glossy, the beans intact.
