Ingredients

Steps

  1. Simmer the dashi, soy, and mirin 5 minutes into mentsuyu; chill it well. Cold noodles demand cold dip.
  2. Boil the soba 4 minutes — no longer. Rinse under cold running water, rubbing gently to wash off the starch, then drain on a bamboo mat.
  3. Shred the nori and slice the scallions; set out the wasabi and daikon in small dishes.
  4. To eat: dip a small bundle of noodles into the mentsuyu, never soak. Add wasabi or daikon to the dip as you like.
  5. Finish by pouring the hot soba cooking water into the remaining dip and drinking it as sobayu. The meal ends with soup.
