- 1 lb Ground beef
- 0.5 lb Ground pork
- 1 Onion
- 0.5 cup Panko
- 0.25 cup Milk
- 1 Egg
- 1 cup Demi-glace sauce
- 3 cups Rice
- 2 cups Steamed broccoli
Steps
- Sauté the onion until soft and sweet; cool. Soak the panko in the milk 5 minutes. Mix everything with the meats, egg, salt, and pepper — then throw the mixture against the bowl to knock out air pockets.
- Shape into four thick ovals and press a dimple in the center of each; the dimple keeps them from puffing into meatballs.
- Sear 3 minutes per side in a hot pan, then cover and steam 5 minutes until cooked through.
- Pour over the warmed demi-glace and simmer 2 minutes, spooning the sauce over.
- Serve with rice and broccoli, the sauce pooled generously. Not a burger — a steak that happens to be ground.
