Ingredients
- 1.5 lb Black cod fillets
- 0.5 cup Saikyo miso
- 3 tbsp Mirin
- 2 tbsp Sake
- 1 tbsp Sugar
Steps
- Whisk the sweet Kyoto miso with mirin, sake, and sugar into a marinade. Coat the cod thickly, cover, and refrigerate 24 hours — the long cure is what makes it silky.
- Wipe off every bit of marinade. Miso burns in seconds under the broiler, so be thorough.
- Broil 8 minutes until the surface caramelizes to a deep gold and the fish flakes.
- Rest 3 minutes. The flesh should be buttery enough to cut with a spoon.
- Serve with rice and something green and simple. Luxury that asks almost nothing of the cook.
