Ingredients
- 1.5 cups Flour
- 3 Eggs
- 0.75 cup Sugar
- 2 tbsp Honey
- 0.5 tsp Baking soda
- 0.25 cup Water
- 1.5 cups Anko
- 1 tbsp Mirin
Steps
- Whisk the eggs, sugar, and honey until pale and thick. Fold in the flour and baking soda, then the water and mirin; rest 15 minutes.
- Cook small pancakes in a dry nonstick pan over medium-low — no oil. They should be evenly golden, like little suns.
- Cool the pancakes completely. Warm pancakes melt the filling into a mess.
- Sandwich generous spoonfuls of anko between pairs, pressing the edges to seal.
- Serve at room temperature with tea. Doraemons favorite, and the pancake-to-filling ratio is a matter of personal honor.
