Ingredients
- 2 cups Anko
- 2 tsp Agar agar
- 0.5 cup Sugar
- 2 cups Water
- 0.25 tsp Salt
- 0.5 cup Chestnuts
Steps
- Simmer the agar in the water 3 minutes until completely dissolved — undissolved agar makes grainy yokan.
- Stir in the anko, sugar, and salt; cook 5 minutes, stirring, until thick enough to coat a spoon.
- Fold in the chestnuts and pour into a lined loaf pan. Tap out air bubbles.
- Chill 3 hours until firmly set. Slice with a wet knife, wiping between cuts.
- Serve in neat slices with green tea. Dense, smooth, and intensely beany — the energy bar of the tea ceremony.
