Ingredients
- 1.5 lb Salmon fillets
- 3/4 cup Feta
- 3 tbsp Dill
- 2 tbsp Parsley
- 1 Lemon zest
- 1 tbsp Dijon mustard
- 2 tbsp Olive oil
- 2 cloves Garlic
Steps
- Heat the oven to 400°F and line a sheet pan with parchment.
- Mash the feta with the chopped dill, parsley, lemon zest, Dijon, olive oil, and minced garlic into a chunky, spreadable crust.
- Pat the salmon dry, season with salt and pepper, and pack the feta crust thickly onto the top of each fillet.
- Roast 12 to 14 minutes, until the crust is golden and the salmon flakes but is still rosy in the center.
- Broil 1 to 2 minutes at the very end for extra browning — watch it like a hawk, since feta goes from golden to scorched fast.
- Squeeze lemon over the top and rest 3 minutes before serving.
